You should be able to drop the new 1.8 server jar file into your Minecraft server folder without any porblems. I just double checked both the Windows and Mac versions and they seem to be working - what kind of problems are you seeing?

Just the iOS client and the new items to be added. Should it be all manual?

Well the new items can be added through the server under the item management. I'll include those by default in the next update, but you can add them manually for now to get them to the clients.
